Spicy, Creamy, Cheesy Chicken Casserole

Well the name speaks for itself. We had returned from vacation to find we had suffered a loss of a beloved aunt and a friend's mother, so we drove to Dallas to pay our respects and returned with a terrible virus that wiped us out for a week. No fun.

When sick I always make a big batch of chicken broth in the pressure cooker with loads of fresh turmeric and ginger, but after living off that for days, we were craving comfort food. The best thing EVER is Instacart delivery from Whole Foods! I typically love shopping groceries, but since I was also working, simply had no energy to go shopping and then cook. Delivery saved the day!! This recipe freezes really well and while I served it with gluten free rotini ( a guilty treat after days of nothing but green tea and broth), the hubby liked it poured over a flaky biscuit.


INGREDIENTS
3 split skinless chicken breasts, bone in.
1 tbs Lemon Pepper blend (We love Trader Joe's)
1 onion
1 celery stalk
1 large carrot roughly chopped
3 cloves garlic
2 bay leaves
several sprigs fresh thyme or 2 tsp dried thyme
1 jalapeno
1 carton condensed cream of chicken soup (Pacific organic brand)
1 tbs onion powder
1 tsp garlic powder
1 tbs paprika
3 cups spring water
a "glug" of white wine
1 cup cream cheese
1/4 cup jalapeno jack cheese

In a heavy dutch oven, brown chicken in a little oil (we use avocado these days) after you've generously sprinkled the chicken with lemon pepper blend. Once the skin has a little golden color to it, set aside on a plate and add chopped onion, celery, carrot, a whole jalapeno split in half lengthwise (I'm trying to open up my sinuses people), and saute over medium heat until softened. About 5 minutes. Add the slightly smashed garlic cloves and cook until fragrant- about a minute. Do not over cook the garlic or it will burn and taste bitter. Add that glug of white wine (about 1/4 cup) and reduce another 30 seconds to cook off the alcohol.

Re-introduce the chicken, add two bay leaves, a few sprigs of thyme, the cream of chicken, spices and spring water. It will look like this:

Cover and place in a 215 degree oven for four hours or until the chicken is tender. Remove chicken and discard the bone. Remove thyme stems and bay leaf. Add cream cheese and with an immersion blender or in a blender, whip it all up until the sauce is smooth and creamy. Add the shredde jalapeno jack cheese and melt into the sauce. Pour over the chicken and pasta or biscuit or some roasted veggies such as zucchini, turnips and squash or even sauteed greens. We topped with crispy bacon, chives and parsley.

Spicy, creamy and comforting. Perfect after days of stress and sickness or just any time you want a little comfort, really.

Grilled Chicken Pitas with Bacon and Lemon, Chive Aioli



Ever have one of those days when you've got a bunch of leftovers and you find the perfect way to marry them? We recently had one of those moments. We had a head of local butter lettuce, some leftover grilled chicken paillard, some sugar cured bacon and fresh pitas. I uncovered a nice organic lemon and some chives and thought, "aoili!".

I have a friend who hates leftovers, but I think if you get a little creative, you can make great use of them. This wasn't exactly too creative, but it certainly was tasty and you could just make lettuce wraps if you want to go low carb or gluten free.

This "cheaters" aioli is very fast and easy to make:
Simply add 1/4 cup mayo or low fat Greek yogurt, zest one small garlic clove, zest a lemon and stir in 1 tsp fresh chopped chives. Voila!

Gather the ingredients...

Stuff them in a pita and there you have it! Super easy!

Sugar Bacon with Meyer Lemon Blueberry Pancakes

Bacon seems to be the "it" thing these days. Well it's always been the "it" thing for me and once you make this super easy sugar cured bacon, you won't ever mess with frying up greasy bacon in a pan again. Part of the reason we choose to stay home for Sunday brunch rather than go out for brunch at a restaurant, is that sadly most places don't cook their bacon properly. It's always undercooked and rubbery, while ours is crispy and crunchy and sweet. It's really bacon candy when you think about it. And what's not to love about bacon candy??? Pair it with some tasty meyer lemon blueberry pancakes and you've got yourself a pretty sweet deal.

SUGAR BACON
1 package of good quality center cut bacon such as Applegate Farms "Sunday Bacon".
4 tbs brown sugar
a hearty few cracks of fresh black pepper

Tools: baking pan, aluminum foil, cooling rack, non stick spray

Layer a baking pan with foil, cover with a cooling rack, spray the rack with non stick spray and lay the bacon across the cooling rack. Generously sprinkle sugar all over the bacon, crack fresh pepper over it and bake in a 350 degree oven for about 30 minutes until golden and crispy. Clean up is a cinch! You just throw away the foil and clean the cooling rack. No greasy mess and the fat drips away from the bacon, making it so perfect and crunchy.



MEYER LEMON PANCAKES
These are super easy! Just get your favorite pancake mix (I like Kerbey Lane Buttermilk pancakes)
The key here is to NOT follow the directions on the box. Instead of water I use buttermilk, add 1 tbs of vanilla extract, a pinch of salt, the zest of one meyer lemon and a dollop of ricotta cheese plus a beaten egg. Then add some frozen or fresh blueberries and make cute little silver dollar sized pancakes on a griddle or pan heated to 375 degrees. I make these during the last 10 minutes of bacon cooking. Serve with a fried egg and some hash browns and you've got a feast to rival any brunch at the local restaurant!

Oh my goodness... Is that a bottle of champs I spotted in the fridge??  Why I don't mind if I do!

Roasted Pancetta and Patate Arrosto

My gorgeous and smart friend Michelle suggested we attend a Tuscan cooking class at our local Central Market taught by renowned chef Gina Stipo and of course I had to make this dish as soon as possible. We were also served an insanely delicious chesnut soup and calamari braised in marinara, which I will soon cook and post here.

But really, what's not to love about pork cooked in BACON?? Since uncured pancetta is impossible to find here in austin, I substituted uncured Applegate Farms Sunday Bacon. My husband devoured half of the 2 pound roast if that tells you anything...



Ingredients

Raw pancetta or 1 package uncured bacon (I use Applegate Farms or Niman Ranch)
1 pork loin
fresh rosemary from two sprigs
4 leaves fresh sage
1 tsp ground fennel seeds, or fennel pollen
3 garlic cloves
salt to taste
2 cups dry white wine



Directions

In a food processor, make a paste of 1 tbs olive oil, sage, fennel, rosemary and garlic.
Salt both sides of pork loin and rub paste on top of the loin. Layer the loin with bacon strips and tie it with string to secure.

Place in a roasting pan and add about 2 cups of white wine to generously coat the bottom. Place it in a preheated oven at 450 degrees for about an hour until the middle reads 150 degrees. Let it rest 15 minutes before thinly slicing. Reduce pan juices on stove top with a bit more wine, strain fat and drizzle. garnish with parsley and serve with Roasted potatoes (Patate Arrosto).

Patate Arrosto
4 large Yukon potatoes peeled and cut into large chunks about an inch cubed.
1/2 cup olive oil
1 tbs chopped fresh rosemary
1 tbs chopped fresh sage
3 garlic cloves, finely chopped
2 tsp sea salt

Mix ingredients together and line in a large baking dish and cook along side the pork about 45 minutes to one hour so they are golden brown and cooked through. Finish with a little more salt if needed.
