Watermelon, Fig and Buratta salad

A Delectable and Refreshing Summer Salad
2 cups cubed watermelon
6 fresh figs, quartered
1/4 cup honey toasted pecans
4 ounces torn Burrata cheese or buffalo mozzarella (goat cheese also works well, but add just a bit as it packs a punch)
chiffonade of mint leaves

Combine all the aforementioned  ingredients in a bowl toss with a squeeze of meyer lemon or tangerine, let it "rest" in the fridge for 20 minutes, then drizzle honey and some aged balsamic vinegar and olive oil. Sprinkle with fresh cracked sea salt. Enjoy!
