Buttery Burrata!

Burrata means butter in Italian. Butter is perfection in my opinion and since I try to live a healthy lifestyle, it is an occasional treat, as is the occasional guilty pleasure of Burrata cheese. I know I posted earlier about Burrata, but the other day at Whole Foods, they had local San Marzano tomatoes and I thought to make a quick and easy fresh caprese salad, and top it with Burrata. According to Thomas Keller's Ad Hoc cookbook, Burrata hails from Apulia, which is the "heel" in the "boot" of Italy.  Speaking of the Ad Hoc cookbook- it is a must buy for the home cook as it offers so many fabulous tips to make one's skill set better. The tip for chopping chives was worth it alone- plus it is truly food porn and great to look at.

So after a sweltering 109 degree day, I took a dip in the pool and ate this simple salad which was the perfect indulgent ending to another fabulous day in Austin.
